As we have gotten into the fall months and cooler weather (especially here in New York), I wanted to share with you two healthy comfort food recipes, that are especially good on those cozy weekend days. I have to admit, I'm a chocolate lover, so if there is a way to use cacao or dark chocolate in my recipes, I do it!

What I love about these snacks is that they are kid-friendly and contain ingredients that are good for you (or at least MUCH better than most of the other usual choices). Think black beans or almond flour instead of white flour, maple syrup instead of agave or refined sugar, flax and chia seeds (think fiber, omega 3's and antioxidants), and spices such as cinnamon and nutmeg, that have health benefits. And let's not forget walnuts for its omega 3's, antioxidants and vitamins!
Black bean walnut brownies - great as a nutrient-packed dessert that doesn't give you (or your kids, if you are a parent) the same sugar high that's usually followed by a low as regular brownies do. You may want to serve them with some raspberries and blueberries on the side, if you like to mix chocolate + fruit.
Kid-friendly comfort muffins - great for weekend breakfast or snack. I will share my favorite variations of these muffins that get 2 thumbs up from my kids! For extra antioxidants, you can make a mixed berry version. You can also go for banana + chocolate chip variety (my kids' fave). My mom's favorite is the apple, peach and walnut version, which is just delish.
